These little tartlets contain only natural sugars, are gluten-free, and are vegan! The dates and strawberries provide the sweetness while the cashews make the filling super smooth and creamy. These adorable tartlets make the perfect afternoon tea treat or dessert when served with fresh fruit and a cheeky drizzle of vegan cream.

Raw Strawberry Tartlets [Vegan, Grain-Free]








For the Base:

  • 1 cup hazelnuts
  • Scant 1/3 cup of Brazil nuts
  • 1 tablespoon of coconut oil, melted
  • 3.5 ounces of dates

For the Cheesecake Layer:

  • 1 cup of cashews, soaked and drained
  • 2.8 ounces of strawberries
  • 1 can of coconut cream
  • 1 tablespoon of coconut oil, melted
  • 2 tablespoons of maple syrup


To Make the Base:

  1. Grease 4 tartlet pans with coconut oil or vegan butter.
  2. Place the hazelnuts, Brazil nuts, melted coconut oil, and dates into a food processor/blender and whizz up until like breadcrumbs.
  3. Firmly press the mixture into the greased tins and place into the freezer.

To Make the Filling:

  1. Place the soaked cashew nuts, strawberries, coconut cream, coconut oil, and maple syrup into a food processor/blender and whizz up on high until smooth. This will take around 5 minutes.
  2. Pour into the base mixture and level. Pop back into the refrigerator to set. This will take around 1 hour.
  3. Decorated tartlets with strawberries, freeze-dried strawberries, flaked almonds, vegan cream, and whatever else you like.
