How to Prepare Raw Pistachio Date Squares [Vegan, Gluten-Free]

  1. In a food processor, combine your dates, warm water, 1/4 cup and 2 tablespoons of pistachios, sea salt, and vanilla until a paste forms.
  2. Transfer the paste to a foil-lined small 4x4-inch dish or square container. Spread it evenly, then cover it, and freeze it for 10 minutes.
  3. Meanwhile, combined cacao powder, liquid coconut oil, and maple syrup in a medium bowl with a whisk until it's homogenous.
  4. Remove the pan from freezer and cut it into squares. Dip each date square into the chocolate coating and sprinkle it with the remaining pistachios.
  5. Place each square on a lined baking sheet and them return to freezer for 15 minutes.
  6. Store in the squares in the refrigerator.
