Ingredients You Need for Raw Broccoli and Apple Pesto Pasta [Vegan, Gluten-Free]

  • 8.8 ounces broccoli (only the tops, save stems for future use)
  • 10 salted capers
  • 4 sun-dried tomatoes
  • 1 small apple of any variety, chopped
  • 1 small piece of fresh ginger, to taste
  • 1 bunch of fresh mixed herbs
  • 2 tablespoons raw peanuts
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon pink pepper
  • Pasta of choice (gluten-free, grain-free, etc...)

How to Prepare Raw Broccoli and Apple Pesto Pasta [Vegan, Gluten-Free]

  1. Wash the broccoli. Rinse capers, then soak them in warm water with the sun-dried tomatoes for 10 minutes, then drain. Rinse the peanuts as well.
  2. In the bowl of a blender or using a mortar and pestle, add olive oil and lemon juice. Then, add all other ingredients and grind into your preferred consistency.
  3. Serve with your pasta of choice and store the remainder in an air-tight jar for up to a week.
