Ingredients You Need for Quick and Easy Mini Mediterranean Quiches [Vegan]

  • 1 cup diced canned tomatoes
  • 1/3 cup, plus 1 tablespoon, plus 1 teaspoon soy cream
  • 2 cups sun-dried tomatoes, divided
  • 1/2 sweet onion
  • 2 cloves of garlic
  • 1 tablespoon soy flour
  • A pinch of sea salt, ground black pepper, dried rosemary, and oregano
  • 3.5 ounces green olives
  • 1 package refrigerated puff pastry

How to Prepare Quick and Easy Mini Mediterranean Quiches [Vegan]

  1. Preheat oven to 355°F.
  2. Place canned tomatoes, soy cream, 3/4 of the sun dried tomatoes, roughly diced onion and garlic, soy flour, and the herbs and spices in a blender and mix until well combined .
  3. Place the puff pastry on a floured table and gently roll it a little bit thinner. Use a big mug to cut out about 8 circles and place them in a buttered or oiled muffin pan.
  4. Spoon in the tomato filling. On top, add diced olives and the rest of the sun-dried tomatoes. Sprinkle with some more seasoning.
  5. Bake for 25–30 minutes, or until the crust is golden brown. The filling is going to rise up during baking and collapse again after taking them out.
  6. Let the quiches cool off for 10 minutes, then detach the crust with a knife and gently remove them from the baking sheet. The longer you let them cool, the firmer they’ll get.
