Ingredients You Need for Oil-Free Purple Pancakes With Chocolate Sauce [Vegan, Gluten-Free]

For the Pancakes:

  • 3/4 cup, plus 1 3/4 tablespoons raw buckwheat groats, soaked
  • 1 3/5 cups gluten-free oat bran
  • 2 tablespoons ground flax seeds
  • 1/2 cup, plus 2 tablespoons naturally sweet non-dairy milk (oat or brown rice)
  • 3/4 cup, plus 2 tablespoons water
  • 1/2 teaspoon Himalayan salt
  • 2.5 ounces zucchini, sliced
  • .7 ounces raw beets, cut into small pieces or thin slices
  • 3.2 ounces blueberries, fresh or frozen
  • 1 heaped tablespoon applesauce
  • 2 teaspoons baking powder

For the Chocolate Sauce:

  • 1 heaped teaspoon tahini
  • 1 tablespoon coconut milk
  • 3 tablespoons oat or rice milk
  • 2 tablespoons carob powder
  • 1 teaspoon cacao powder
  • 1/2 teaspoon cinnamon

How to Prepare Oil-Free Purple Pancakes With Chocolate Sauce [Vegan, Gluten-Free]

To Make the Pancakes:

  1. Soak buckwheat groats overnight or at least for 6 hours. Rinse and drain.
  2. Add the rinsed groats along with other ingredients into blender and blend until smooth and homogeneous batter forms.
  3. Taste and adjust by adding more salt/sweetener if necessary.
  4. If you have time let it sit for about 10 minutes ( it’ll thicken up a bit).
  5. Take a good quality non-stick pan. Add a few drops of oil onto the pan and swipe it off with folded kitchen paper. Let all the oil absorb into the paper and use it to swipe the pan clean between pancakes.
  6. Put a ladleful of batter onto the pan and even it out with a spoon/ladle or by shaking and/or tilting the pan to get the exact shape of your pan bottom. The frying time greatly depends on your stove. Flip it around when it is almost dry on top and also check the color of the bottom side.

To Make the Chocolate Sauce:

  1. Combine everything in a bowl, whisk with a fork to combine, and serve with pancakes.
