How to Prepare Oat and Berry Jam Slice [Vegan]

    1. Preheat oven to 360ºF and line a tray with parchment paper.
    2. In a large bowl, combine ground oats, oats, coconut sugar, butter/coconut oil, and almond butter by hand. Rub the mixture between your fingers until well combined then form a ball with two thirds of the mixture. If too crumbly, simply add a bit of water or milk of choice. Reserve the other third to crumble on top.
    3. Press large ball of mixture into prepared baking tray. Use a rolling pin if necessary.
    4. Place berries into a shallow bowl and combine with arrowroot powder and lemon juice. Use a fork to mash it all together and distribute over base layer. (Don’t worry, it will thicken during baking).
    5. Lastly, crumble remaining oats over jam and bake for 15 - 20 minutes or until golden on top.
    6. Let cool completely before slicing.
