How to Prepare Millet Croquettes With a Pickled Plum Dressing [Vegan]

To Make the Croquettes:
  1. Preheat the oven to 350°F.
  2. Dry roast the millet in a pot, stirring frequently until the grain turns slightly golden and gives off an aroma.
  3. Add the cold water and salt, and bring to boil. Cover, and reduce heat, simmer until water is absorbed. Taste the grain to see if additional cooking is needed and if so, add more water.
  4. Add all of the ingredients together and mix well with your hands until very sticky.
  5. Using a 1/4 measuring cup, form the croquettes by scooping the mixture in the cup and hitting the top of it to release the croquette. Bake for 20-25, or until croquettes develop a slight crispy shell.
To Make the Dressing:
  1. Add all ingredients to a bowl and beat until dressing is emulsified.

  1. “Your time is limited, so don’t waste it living someone else’s life. Don’t be trapped by dogma – which is living with the results of other people’s thinking. Don’t let the noise of other’s opinions drown out your own inner voice. And most important, have the courage to follow your heart and intuition. They somehow already know what you truly want to become. Everything else is secondary.” ― Steve Jobs
