To Make the Rolls:

  • 1 1/2 cups warm water
  • 2 tablespoons instant yeast
  • 1 tablespoon raw sugar
  • 2 teaspoon sea salt
  • 3 tablespoon olive oil
  • 1 cup semolina flour
  • 2 cups whole wheat flour
  • 3/4 cup all-purpose flour

To Make the Rolls:

  1. Mix everything together, and allow the dough to rise until doubled in bulk (at least an hour, probably 2 in less than tropical climates).
  2. Then turn it out on a floured board, divide into 8 equal portions, shape into rolls, and allow them to rise again for about 20 minutes.
  3. Sprinkle some coarse sea salt on top and then bake at 375°F. for about 15 minutes until golden brown.
  4. Slice and toast ever so lightly before serving.
  5. When you're ready to make some more progress toward meal time, press out your extra-firm tofu for at least 15 minutes, wrapped in paper towels and pressed under a big book or something. Get that sliced 3/4-inch thick, olive oiled, salted, topped with garlic powder and roasted for about 30 minutes at 450°F, flipping twice.
  6. Assemble sandwiches as desired.
