Ingredients You Need for Key Lime Mousse With Cashew Frosting [Vegan, Gluten-Free]

For the Mousse:

  • 1 cup almond milk
  • 3 tablespoons chia seeds
  • 1/4 teaspoon vanilla extract (optional)
  • 1 avocado/small avocado
  • 4 tablespoons maple syrup
  • Juice and zest of 4 limes (see notes)

For the Frosting:

  • 1/2 cup cashews (soak for 12-24 hours) (see notes)
  • 4 tablespoons virgin coconut oil
  • 2 tablespoons maple syrup (see notes)
  • 1/2 teaspoon vanilla extract
  • A hint of sea salt

How to Prepare Key Lime Mousse With Cashew Frosting [Vegan, Gluten-Free]

  1. In a jar, mix the almond milk with the chia seeds and let stand in the refrigerator for at least 2 hours. The seeds will form a gel texture.
  2. Then place this mixture in a blender along with the rest of the ingredients for the mousse and process until obtaining a homogeneous consistency. You can also do it with mini food processor.
  3. Place in glasses or jars in portions and store in refrigerator while preparing the frosting.
  4. Discard water from cashews and rinse thoroughly. Place all the ingredients for the frosting in a processor or blender and process until obtaining a homogeneous consistency (2-3 minutes).
  5. You can spread the frosting over the mousse with the help of a spoon or pass the frosting through a sleeve with peak decorator to spread the frosting with your favorite design.
  6. Serve or store in refrigerator for up to two days.

Notes

Ideally, leave the cashews to soak for 24 hours for a more creamy frosting. Rinse and change the water every 12 hours. You can replace 1 tablespoon of maple syrup for 25 drops of liquid stevia or 1/2 teaspoon of stevia powder.
