How to Prepare Key Lime Mousse With Cashew Frosting [Vegan, Gluten-Free]
- In a jar, mix the almond milk with the chia seeds and let stand in the refrigerator for at least 2 hours. The seeds will form a gel texture.
- Then place this mixture in a blender along with the rest of the ingredients for the mousse and process until obtaining a homogeneous consistency. You can also do it with mini food processor.
- Place in glasses or jars in portions and store in refrigerator while preparing the frosting.
- Discard water from cashews and rinse thoroughly. Place all the ingredients for the frosting in a processor or blender and process until obtaining a homogeneous consistency (2-3 minutes).
- You can spread the frosting over the mousse with the help of a spoon or pass the frosting through a sleeve with peak decorator to spread the frosting with your favorite design.
- Serve or store in refrigerator for up to two days.
Notes
Ideally, leave the cashews to soak for 24 hours for a more creamy frosting. Rinse and change the water every 12 hours. You can replace 1 tablespoon of maple syrup for 25 drops of liquid stevia or 1/2 teaspoon of stevia powder.
