How to Prepare Gingerbread Ice Cream [Vegan, Gluten-Free]
- Soak cashews for 8-12 hours or overnight, then rinse.
- Line a 9x5-inch loaf pan with parchment paper.
- Add all ingredients to a high-speed blender and blend until creamy and smooth. Pour the mixture into a loaf pan.
- Freeze for 4 hours before serving.
Aside from soaking the cashews (which is not big deal) it sounds quick, say, and delicious.Cashews soaking now. I just forget too often that I have to soak them-one would think I would remember by now.
