During the hot summer months, what you need is an ice-cold scoop of homemade peach gelato made with in-season, fresh peaches. No ice cream machine required! This recipe can be whipped up with minimal ingredients and effort.
Fresh Peach Gelato [Vegan, Gluten-Free]
- 5 peaches
- 4.4 ounces soy yogurt, plain or vanilla
- 1 tablespoon rice malt
- Wash and dry the peaches. Cut into pieces while maintaining the peel and place them in the freezer for about 6 hours.
- Put the yogurt in the freezer as well.
- Place the peaches in a blender blend to reduce into a paste. Add the yogurt and malt if using. Operate until the mixture is creamy. Serve immediately or store in the freezer and stir every hour to keep it creamy. You can also pass it to the mixer just before serving if it solidifies.
