Incredibly moist and delicious, this carrot cake is also incredibly easy to make! Carrot cake is not complete without the cream cheese frosting, so of course, it's also topped with a rich layer of just that. However, if you don't have access to vegan cream cheese then you can make your own or use whipped coconut cream. What makes this cake healthier than the rest is the use of olive oil and flaxseed meal to give it the light moist texture, added fiber, and zero cholesterol.

  1. This sounds delicious, but not very healthy with 3 1/2 cups sugar plus the sugar from the carrots and raisins. Vegan does not always mean healthy. I\’ve seen some very over weight vegans, probably from eating things like this.

    1. Jay if you want to be a skinny boring healthy vegan, why are you looking at cake recipes?? I\’m totally making this and can\’t wait to see if it turns out as well as I\’m hoping!
