Crusty Whole Grain Bread [Vegan, Gluten-Free]
Ingredients
Dry Ingredients:
- 1 cup buckwheat flour
- 1 1/2 cups brown rice flour
- 1 cup millet flour
- 1 cup gluten-free oats
- 1/4 cup arrowroot starch
- A pinch of salt
- 1/2 teaspoon cinnamon
- 2 teaspoons baking powder
- 1 tablespoon coconut oil
- 3/4 tablespoon extra virgin olive oil
Wet Ingredients:
- 2 cups water
- 1 tablespoons apple cider vinegar
- 1 tablespoon molasses
- 1 teaspoon extra virgin olive oil
- 1/4 cup oats, or crushed nuts and seeds of your choice
- A dash of salt and cinnamon
- 1 teaspoon extra virgin olive oil
- 1 teaspoon molasses
Preparation
Dry Ingredients:
- Preheat oven to 350°F.
- Pulse all dry ingredients together in a food processor, and then blend in the oils.
- Blend in wet ingredients well, form a ball and flatten slightly in center of a non-stick baking sheet.
- Rub the surface of the ball gently with the oil. Evenly coat the top with 1/4 cup of oats and some cinnamon and salt. Bake in preheated oven for 30 minutes, remove and glaze.
- In a small bowl, mix the glaze ingredients together. Drizzle over the top of the bread and use a food brush to spread over the top gently.
- Return the bread to the oven until the bread is fully cooked through, about 30 minutes.
