Creamy Mushroom and Spinach ‘Orzotto’ [Vegan]

This pasta dish is great because I made the sauce during the day and then all we needed to do in the evening is cook the pasta and stir it in! Perfect for when you want a home cooked meal that comes together quickly and tastes great.

Ingredients You Need for Creamy Mushroom and Spinach ‘Orzotto’ [Vegan]

  • 1 onion
  • 1 celery stalk
  • 1-2 cloves garlic
  • 10 ounces of mushrooms
  • 2 Large handfuls spinach
  • 5 ounces vegan cream cheese
  • 1/2 teaspoon wholegrain mustard
  • A dash of vegan Worcestershire sauce
  • A pinch of dried chili flakes
  • A handful of fresh basil leaves
  • Salt and pepper
  • 4 ounces orzo pasta

How to Prepare Creamy Mushroom and Spinach ‘Orzotto’ [Vegan]

  1. In a frying pan cook the chopped onion and celery in a drizzle of oil for 4-5 minutes then add the crushed garlic and cook for a further 2 minutes.
  2. Slice the mushrooms and add to the pan and continue to cook for 5 minutes until the mushrooms are wilted. Add the spinach and stir until cooked.
  3. Stir in the cream cheese, mustard, Worcestershire sauce, chilli flakes and basil and if needed a splash of water to loosen the sauce. Season to taste,
  4. In a separate saucepan cook the pasta according to packet instructions, then drain and add to the frying pan with the mushroom sauce. Stir keeping it over a medium heat and serve hot with a side salad.
