Ingredients You Need for Cashew and Herb Stuffed Mushrooms [Vegan, Gluten-Free]

  • 1 cup cashews soaked for a few hours
  • 1 garlic clove, crushed
  • 1 tablespoon lemon juice
  • A pinch of salt
  • 1/2 cup silken tofu
  • 1 tablespoon nutritional yeast
  • 1/2 cup fresh herbs
  • A sprinkle of black pepper
  • 10-12 White Button mushrooms

How to Prepare Cashew and Herb Stuffed Mushrooms [Vegan, Gluten-Free]

  1. Blend the cashews, garlic, lemon juice and salt in a food processor until smooth.
  2. Then, add the silken tofu, herbs, nutritional yeast, and pepper. Use whatever herbs you like. Blend until well processed.
  3. Take the stalks out of the mushrooms. Fill the mushrooms with the cashew tofu mixture. Add halved cherry tomatoes on top if desired.
  4. Bake in a preheated oven at 355°F for 10 minutes.
