This hummus sandwich is so simple and easy-to-make, but so delicious! Carrot and zucchini, respectively, are shredded, combined with hummus and dill, and then slathered on two pieces of crunchy, toasty bread. Lunch made easy (and nutritious)!
Carrot and Zucchini Hummus Sandwich [Vegan]
- Pepper (optional)
- Bread, toasted
- Finely grate a carrot, chop up some dill and then add them to a bowl with some hummus, a dash of salt, and a bit of pepper, if you'd like. Mix together and then spread on a slice of bread.
- Repeat with zucchini.
