How to Prepare Black Bean Sausages With Homemade Buns [Vegan]
For the Sausages:
- Mix the spices together and set them aside.
- Pan fry the onions, mushrooms, and garlic in olive oil until they get brown. Set this aside to cool.
- Then mash the beans well with a potato masher or pulse them in a food processor, but leave lots of whole beans and chunks.
- Mix the spices in with the beans and add the remainder of the sausage ingredients.
- Mix this together well before adding the cooled vegetables. Like most vegan sausages, they require steaming in tin foil then a quick fry in a hot pan before serving.
For the Buns:
- Mix everything together and allow the dough to rise until doubled in bulk.
- Turn the dough out onto a floured board, divide it into 6-8 equal portions. Shape these like sausage rolls, and allow them to rise again for about 20 minutes.
- Then bake them at 375°F for about 20 minutes until they're golden brown.
- Slice and toast them ever so lightly before serving.
- Fill them with your sausages and whatever else you want on your sandwich.
