  • 1/4 cup pitted Medjool dates, soaked in water for 30 minutes
  • 1/4 cup raw cashews, soaked in water for 30 minutes
  • 1 (12-ounce) can full-fat coconut milk
  • 1 tablespoon coconut oil
  • 1/4 teaspoon food-grade activated charcoal
  • Juice from 1 1/2 medium lemons (about 3 tablespoons)
  • Pinch of sea salt

How to Prepare Ash-Lemon Ice Cream [Vegan]

  1. Freeze the bowl from an ice-cream maker for at least 24 hours before using.
  2. Rinse and drain the dates and cashews. In a blender, combine the dates, cashews, coconut milk, oil, charcoal, lemon juice, and salt. Blend on high for 1 minute, until smooth and creamy, scraping down the sides as needed.
  3. Pour the mixture into a small saucepan and bring to a simmer over low heat. Simmer for 5 minutes, turn off the heat, and let the mixture cool down. Strain through a fine-mesh sieve into a lidded container and refrigerate for a few hours, until completely cool, before churning.
  4. Following the ice-cream maker’s instructions, churn the ice cream until it resembles soft serve. Transfer to an airtight container, place a sheet of parchment paper on the surface, and freeze for at least 1 hour before serving.
