Tacos are great because they’re simple to make and easy to eat. They can be as simple as tortilla, rice and beans, or as complex as you can imagine with several type of veggies. There are so many possibilities for veggie tacos; do you want tofu or grilled veggies, a hard taco shell or a soft tortilla? How about dressing up your tacos with some black bean and corn salsa, salsa verde, blueberry salsa and papaya salsa?
Omitting meat doesn’t mean your tacos will be skimpy. Even simple tacos can be hearty and filling. Here are five meal options for a simple summer taco night:
An easy way to replace the taco meat inside tacos and burritos is to use lentils. You can spice the lentils just like you would taco meat. Buy them dry and in bulk to save your money, then soak and boil them yourself. Or, you can buy packaged lentils that are pre-cooked to save time.
