If you’ve ever made a macaron, then you know that they are no easy undertaking. There’s so much that can go wrong when making these delectable French cookies. For one, you need to ensure that each cookie is perfectly sized so your end result is picture-perfect. When baking, they can crack, burn, or deflate — and if the humidity is high, you may as well give up right then and there. And yet, making a macaron can be one of the most rewarding experiences for a baker looking for a challenge.

Unfortunately, most macarons on the market are made with eggs, rendering them unsuitable for those looking to eat plant-based foods. However, one skilled baker has been making delicious vegan macarons since 2012 and selling them under the name Sweet Maresa’s. According to Lagusta’s Luscious, a vegan chocolatier in New Paltz, New York: “These macarons have a thin, delicate shell, and a soft, moist interior. Each macaron is filled with a silky ganache or buttercream, naturally flavored to match its shell.” Um, sounds amazing to us.

If you’re in New York, you can find Sweet Maresa’s at Lagusta’s Luscious in New Paltz, Confectionary! in Manhattan, and Riverdel in Brooklyn. To order Sweet Maresa’s online, click here.

Sweet Maresa’s has been making egg-free macarons made from almond flour, pistachio flour, and coconut flour in a wide variety of flavors since 2012.

…Along with special edition flavors that are served at vegan pop-up events.

We love how each macaron is carefully hand-crafted and decorated, like a work of art.

Each macaron is also filled with a rich ganache or buttercream that matches the outer flavor.
