The British Royal Family may be steeped in tradition, but it seems they’re not afraid of progress, either! Prince William and Kate Middleton will join Kate’s mother Carole Middleton for lunch this Christmas, and during an interview, Carole gave a preview menu, which will include options for vegan and plant-based guests.

Carole Middleton confirmed that it was her own journey with plant-based eating that led her to make the arrangement. During an interview, she said:

“I’ve recently gone vegan. Or maybe that should be flexitarian.”

Plant-based diets are becoming more and more mainstream in the UK. While it’s not clear how strict Ms. Middleton is with her plant-based eating, she’s serious enough to go public with the information. It may not seem like a big deal to anyone in The United States, but the tabloids are obsessed with the Royal Family, meaning something as seemingly small as a plant-based lunch can make a big splash.

Your Own Plant-Based Christmas

Of course, you don’t have to attend a royal Christmas Lunch to eat delicious vegan holiday delights. Check out these recipes, courtesy of the Food Monster App.

Rich, crunchy and sweet, Kat Condon‘s Chocolate Peppermint Crunch Cups are full of smooth, peppermint-infused coconut butter! The candy canes are optional, which means that this recipe could easily be enjoyed year round. However, I think the candy canes add the perfect extra “oomph” to these cups and make them perfect for a holiday dessert.
