Making egg-free pasta is much easier than many might think, and IT only takes a bit of extra time to prepare. Plus, it is much better, so the extra effort is worth it! Making pasta without eggs is easy and doesn’t even affect the outcome. It is a great way to wow any dinner guests or to brush up on your culinary skills. Check out these tips!

You will need to start by picking out the pasta recipe that you want to create. You can go the easy route or the harder route with this step.
There are plenty of egg-free pasta recipes to choose from for a simpler process, or you can adapt an egg-based pasta to make it vegan. Either way, making pasta is a pretty simple process and usually comes out tasting amazing no matter what you do.
If you are new to making pasta, it might be the better option to go with a recipe that is already egg-free for convenience’s sake.
If you have decided to use a recipe that is not vegan, you will need to replace the eggs with a plant-based alternative.
Eggs are generally added to pasta for color, texture, fat, and binding. To replace these functions, you can use aquafaba, a flax egg, a store-bought vegan egg product, or olive oil. All will give you similar results with a bouncy yet tender dough that is perfect for delicious pasta noodles.
Make sure you follow the measurements as closely as possible when replacing the eggs. You may need to reduce aquafaba over heat so that it isn’t too liquidy. This might be a trial-and-error process, but you will enjoy the journey too!
Next, you will want to start making your egg-free pasta by combining your ingredients and mixing everything. Make sure that you don’t add all of the water at once. Instead, only add water as you need it. Once your dough is shaggy, spill it out onto your counter and begin kneading until everything comes together. Don’t worry if the dough feels stiff. Hard pasta dough should be slightly firm and stiff to the touch. Knead your dough until it looks and feels smooth. If you still see texture and bits of unincorporated dough, you need to keep kneading it.
After you have finished kneading the pasta dough, it will need to rest. This helps the gluten strands to relax and release tension, creating elastic and bouncy pasta instead of rubbery pasta. Most recipes will call for the dough to rest for 30 minutes to an hour, but some might even need 2 hours. You can let it rest for a bit less or more time if you want to, as long as it rests for at least 30 minutes. Don’t leave your dough to rest for any more than 4 hours, or it will begin to dry out.
To let your dough rest safely, put it in a floured bowl and cover it with a lid, plate, or damp towel. This will help to keep the dough clean and moist.

After the dough has rested, you can begin to roll out and shape your egg-free pasta. The best part! If you are working with a large amount of dough, you may need to divide it into two or for different sections to roll out.
If you have a pasta maker, this process will be very simple and fast as you feed the dough into the pasta maker. If you don’t have a pasta maker, you will need to roll the dough out by hand.
Generously flour your surface and roller and begin to roll out the dough. Roll it out until it is very thin but still sturdy to hold and touch. Generously flour the rolled-out dough and roll it up into a tube. Using a sharp knife, cut the dough into even strips and toss them in flour. This will create basic long pasta noodles.

Once your pasta is cut and shaped, you can boil a pot of salted water and cook your fresh pasta. Because this egg-free pasta is fresh, it is going to cook much faster than dried pasta. So be careful not to overcook it.
If you do not plan to eat your pasta immediately, you can let it dry for about 30 minutes before storing it in an airtight container in the fridge. This will last for 5 to 7 days.
If you want to freeze your pasta, let it dry for 30 to 40 minutes, then spread the noodles onto a parchment-lined baking sheet. Put the sheet in the freezer and flash-freeze the pasta until it is frozen solid. Then store it in the freezer in an airtight container. Pasta will stay fresh in the freezer for several months.
If you want to get creative and dry your pasta, you can hang it in a well-ventilated place to dry for 24 to 48 hours. The time will depend on the size of your pasta. You can move the pasta periodically if necessary to make sure it dries evenly. Once the pasta is dry and brittle, you can store it in an airtight container for 2 to 8 months.
