Beyond Meat is once again making our wildest dreams come true! Back in December, we shared that Beyond Meat, makers of the juicy Beyond Burger, debuted a vegan sausage, aptly named Beyond Sausage. The sausage boasts more protein, fewer calories, and less total and saturated fat than a traditional meat sausage.
The initial debut in the Boulder Whole Foods was met with incredible success and now we have some more exciting news about this new product. Beyond Sausage has made its way to the Big Apple and will be available starting TODAY at Schaller’s Stube on the Upper East Side of Manhattan!
The German meat-centric restaurant will offer all three of the Beyond Sausage flavors, prepared in the following delicious ways: The Beyond Classic will showcase the flavors of Berlin with a Bratwurst style, classically paired with sauerkraut and Dusseldorf mustard. The Bahn-Meat features the Hot Italian sausage topped with daikon-carrot slaw, cucumber, fresh jalapeño, and sriracha aioli. The Sweet Sicilian uses the Sweet Italian sausage with a balsamic reduction, sautéed peppers, caramelized onions, and fresh parsley. Holy yum! Best of all, you can also sub in any of these plant-based sausages for other Schaller’s Stube builds!

Schaller’s Stube started as a butcher shop called Schallers & Weber back in 1937 and has remained a family-run business since. In 2014, Jeremy Schaller decided to rejuvenate the family business by turning it into the sausage bar restaurant that it is today. It is great to see that Schaller is continuing to refresh the company to resonate with modern consumers by offering vegan options.
After all, there is a growing number of people who have health concerns, as well as environmental and animal welfare concerns about meat. In fact, more people than ever are reducing their meat consumption and opting for plant-based options instead. According to a 2016 Harris Poll commissioned by The Vegetarian Resource Group, 37 percent of Americans regularly order meals without fish, meat, or poultry when eating out. What is most interesting about this poll is that only around 3.3 percent of adults in the U.S. would identify themselves as being vegetarian. Not to mention, the plant-based meat substitute market is set to hit $6.43 billion by 2023!
