Ah…macaroni and cheese. A comforting, one-pot meal that’s probably on many kids’ repertoire of favorite foods. Kids (of all ages) most likely have tried this delicious concoction of elbow macaroni and cheese. Even Thomas Jefferson and Ronald Reagan had their own favorite versions of this classic dish! But, do you know how it all got started?

 

There isn’t really a single inventor of mac and cheese, but historians note Liber de Coquina, or Book of Cooking, from the 13th century as the first cookbook to list a version of the recipe.

 

Did you know? Macaroni and cheese was considered an “upper-class” recipe until the Industrial Revolution because pasta was hard to come by.

 

You don’t have to be upper-class to enjoy these vegan versions of a classic, but you can feel like one knowing you’re eating a delicious, dairy-free version. Macaroni and cheese was a favorite of Jefferson and was served at an 1802 state dinner. Let’s bring classy back into mac and cheese!

Because vegan means you consume plant based products, the Mac and cheese can be vegan, the macaroni itself comes from wheat, not an animal, and when you combine that with soy based (non dairy) cheese, that\'s how it\'s vegan, all plant based, non dairy
