  • 3 spiralized zucchini
  • 1 cup heirloom tomatoes
  • 1 peeled zucchini
  • the juice of 2 limes
  • 1/2 cup pine nuts / cashew nuts
  • Pinch nutmeg
  • 1 cup fresh basil
  • 1 clove garlic

Preparation

  1. Spiralize the zucchini, cut it into smaller strands if they are too long and place them in a work bowl.
  2. In a blender pulse peeled zucchini, lime juice, basil, pine nuts and nutmeg until smooth.
  3. Toss pasta with the pesto and tomatoes.
