  • 3 cloves garlic, peeled and minced
  • 1 medium yellow onion, peeled and chopped
  • 2 ribs celery, chopped
  • 2 tablespoons olive oil
  • 5 cups vegetable broth
  • 1 medium carrot, peeled and diced
  • 1 cup chopped fresh green beans
  • 2 small red potatoes, peeled and chopped small
  • 2 medium tomatoes, chopped
  • 1 (15-ounce) can cannellini beans, drained
  • 1 teaspoon dried basil leaves
  • 1⁄2 teaspoon dried oregano leaves
  • 1⁄4 cup orzo
  • 1⁄8 teaspoon salt
  • 1⁄8 teaspoon ground black pepper

How to Prepare White Bean and Orzo Minestrone [Vegan]

  1. Over medium-high heat, combine garlic, onion, and celery with oil in a large stockpot. Cook for about 3 minutes, stirring frequently.
  2. Add in broth, carrot, green beans, potatoes, tomatoes, beans, basil, and oregano. Bring to a simmer over medium heat (liquid should be moving, but no bubbles should be forming). Cover and cook for 25 minutes.
  3. Add orzo and cook for another 10 minutes. Season with salt and pepper.
