Ingredients You Need for Walnut Sage Orecchiette [Vegan]

For the Lemony Walnut Sage Sauce:

  • 1 cup fresh sage leaves
  • 1/2 cup walnuts
  • Juice from 2 lemons
  • A pinch of black pepper
  • A pinch of salt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons vegan Parmesan cheese

For the Pasta:

  • Orecchiette Pasta, cooked
  • 1 tomato, diced
  • 2 tablespoons olive oil
  • A pinch of pepper
  • A pinch of salt
  • Juice from 1/2 of 1 lemon
  • Zest from 1 lemon
  • 3-4 tablespoons lemony walnut sauce
  • 1/4 cup pasta cooking water

How to Prepare Walnut Sage Orecchiette [Vegan]

  1. Cook the pasta and set aside but don't get rid of the cooking water.
  2. Then make the lemony walnut sage sauce. Blend all of the ingredients in a food processor until smooth and creamy.
  3. Season the tomatoes with black pepper and salt and sauté in a pan over medium-high heat with the olive oil.
  4. Once the tomatoes start to break down add the cooked pasta and 1/4 cup of the pasta cooking water. Stir in the lemony walnut sage sauce and add the lemon juice and zest. Cook for a few minutes prior to serving.
