  • 3 ounces udon noodles, dry
  • 1 small carrot
  • 1/4 of a red pepper
  • 1 spring onion
  • 1/3 cup snow peas
  • 1/4 cup peanuts
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon tahini

Preparation

  1. Prepare the udon noodles as directed (or boil for about eight minutes).
  2. Finely slice the vegetables.
  3. Combine the soy sauce, lime juice and tahini in a small bowl.
