These bars are deliciously energizing! Fresh turmeric has a vibrant taste and is loaded with health-boosting benefits. Add fresh ginger to the mix and you have a truly spectacular treat. Keep these on hand for when you want a little pick-me-up that's also good for you.

Ingredients You Need for Turmeric Ginger Slices [Vegan]

For the Base:

  • 1 cup oats
  • 1 cup buckwheat grouts, soaked and dried or dehydrated
  • 1 cup desiccated coconut
  • 1 cup dates, soaked
  • 4 teaspoons fresh ginger, finely diced
  • 3 teaspoons fresh turmeric, finely diced
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • A pinch of Salt

For the Icing:

  • 1 cup desiccated coconut
  • 1/2 cup cashew nuts
  • 1 cup sesame seeds
  • 3 teaspoons grated ginger, finely diced
  • 1 teaspoon ground ginger
  • Juice from 1/2 of 1 small lemon
  • 3 tablespoons coconut oil
  • 1-3 tablespoons rice malt syrup
  • A pinch of salt

How to Prepare Turmeric Ginger Slices [Vegan]

To Make the Base:

  1. Add all ingredients, except the buckwheat grouts, into your food processor or blender.
  2. Pulse until well combined, you may need to stop and scrape down the sides occasionally or use your blender tamper to push the ingredients into the blades.
  3. Once all combined add the buckwheat and give it a couple of pulses to slightly combine, but you want to keep the buckwheat whole to get the crunch.
  4. Once all combined, press into a lined baking dish. Using a tablespoon or a silicone spatula, evenly press the mixture out and flatten it down.
  5. Pop it into the freezer to set while you make the icing.

To Make the Icing:

  1. Add all of the ingredients into your food processor or blender and blend until all is combined.
  2. This may take a few minutes as the oils in the sesame seeds heat up and begin to form a creamy-like texture.
  3. Using your tamper and stopping to scrape down the sides will be needed.
  4. When all combined, remove and spread over the crunchy base.
  5. Use a tablespoon or silicone spatula, evenly spread and press the mixture down.
  6. When done, pop back into the freezer.
  7. For best results let it set overnight, however 2-4 hours should be fine.
  8. Slice and serve when ready.
