Ingredients

For the Avocado:

  • 1 large Haas avocado

For the Scramble:

  • 6 ounces firm tofu
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1 tablespoon fresh chopped parsley
  • 1 teaspoon nutritional yeast
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon ground turmeric (or 1 teaspoon freshly grated)
  • 1/2 teaspoon black Himalayan salt

  1. Sauté the onion and pepper in water until soft.
