  • 2 slices toasted bread or sprouted bread
  • Hummus
  • 1/2 a large avocado
  • Sun-dried tomatoes, to taste
  • Arugula
  • Fresh cracked pepper

How to Prepare Hummus, Avocado, and Sun-dried Tomato Sandwich [Vegan]

  1. First, toast your bread.
  2. Spread each piece of toast with 1/4 of avocado. Then, on top of the avocado, add a smear of your favorite hummus. The next layer will be your sun-dried tomatoes. Sprinkle with some fresh cracked pepper and finally, top with spicy greens like arugula.
  3. Serve open-faced or like a regular sandwich.

  1. I\’m considering this for a senior picnic in August. I know that avocado is best used quickly, but preparing the sandwiches ahead of time is my only option. Do you think it would work for this picnic or should I opt for black bean burgers or another recipe without avocado?
