Ingredients

  • 2 cups of chickpeas, canned, strained, and washed
  • 2 cups cooked quinoa
  • 1 cup panko bread crumbs
  • 1/2 cup finely chopped coriander
  • 2 tablespoons coconut milk
  • 1/2 cup coconut cream
  • 3 tablespoons vegan Parmesan cheese
  • 3 tablespoons olive oil
  • 1 tablespoon tandoori masala spice
  • 1 tablespoon garlic powder
  • 1 tablespoon curry powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh cracked pepper
  • A dash of salt

Preparation

  1. Line a pan with parchment paper, grease with coconut oil spray, and set aside.
  2. Now preheat your oven to 375°F.
  3. Combine all of the ingredients into a food processor, and pulse until well combined, do not over-mix. You will find that it is quite full so just use a spoon to push down the sides, and get everything blended.
  4. Now transfer the mixture to a large bowl and begin to portion out your patties.
  5. Once you have shaped your patties, pop them onto the baking pan and cook at 375°F for around 35 minutes or until crispy on the outside.
