Ingredients
- 2 cups of chickpeas, canned, strained, and washed
- 2 cups cooked quinoa
- 1 cup panko bread crumbs
- 1/2 cup finely chopped coriander
- 2 tablespoons coconut milk
- 1/2 cup coconut cream
- 3 tablespoons vegan Parmesan cheese
- 3 tablespoons olive oil
- 1 tablespoon tandoori masala spice
- 1 tablespoon garlic powder
- 1 tablespoon curry powder
- 1 teaspoon smoked paprika
- 1 teaspoon fresh cracked pepper
- A dash of salt
Preparation
- Line a pan with parchment paper, grease with coconut oil spray, and set aside.
- Now preheat your oven to 375°F.
- Combine all of the ingredients into a food processor, and pulse until well combined, do not over-mix. You will find that it is quite full so just use a spoon to push down the sides, and get everything blended.
- Now transfer the mixture to a large bowl and begin to portion out your patties.
- Once you have shaped your patties, pop them onto the baking pan and cook at 375°F for around 35 minutes or until crispy on the outside.
