    Spicy Thai Peanut Sauce [Vegan]

    This spicy peanut sauce is perfect to pair with tofu, tempeh, or your favorite plant-based protein!

    Ingredients You Need for Spicy Thai Peanut Sauce [Vegan]

    • 1 medium leek, finely diced (white onion or green onion work well, too)
    • 2 medium garlic cloves, minced or pressed
    • 2 tablespoons low-sodium tamari
    • 2 tablespoons tomato sauce
    • 1 cup low-sodium vegetable broth
    • 1/2 cup peanut butter (chunky is best)
    • 1 teaspoon brown rice vinegar (any vinegar works)
    • 1/2 teaspoon red pepper flakes
    • 1 tablespoon brown rice syrup (alternatively maple syrup)
    • 1 16 oz package extra firm tofu (or tempeh), cubed
    • 1/2 cup carrot optional, julienned

    How to Prepare Spicy Thai Peanut Sauce [Vegan]

    1. Finely dice your leek or onion and garlic. Saute in a good quality non-stick pan. Can be done with oil, or steamed with water. You just need to soften the garlic and onion.
    2. Add all ingredients except for tofu/tempeh. Simmer for 10 minutes.
    3. Once the sauce thickens, add your tofu or Tempeh. Cook 5 minutes or until hot. If adding carrots, add them at this point as they only take about 5 minutes to soften and cook. You can use a carrot peeler to peel the carrot into slices. Add a bit more vegetable broth if the sauce gets too thick for your liking.
    4. Once you're ready to serve, spoon it over rice, rice noodles, pea pods, etc.
