How to Prepare Spicy Quinoa Falafel [Vegan, Gluten-Free]

  1. Cook the quinoa with a tablespoon of tamari
  2. Toss the garbanzo beans, red onion, garlic, tahini, chili flakes, cumin, coriander, lemon juice, and salt into a food processor and pulse on-and-off for 15 seconds so that it breaks down the beans, but doesn't puree them
  3. Add one cup of the cooked quinoa to the food processor and pulse on-and-off for another 15 seconds until everything is well combined
  4. Roll the mixture with your hands into small balls (about 2 tablespoons of dough for each) and place on a baking sheet
  5. Put them in the fridge for 1 hour
  6. Sprinkle with a little flour on both sides
  7. Heat coconut oil in a large saucepan on medium heat
  8. Add the falafel balls and cook 3-5 minutes on each side.
