Ingredients You Need for Spiced Cauliflower Fritters [Vegan, Gluten-Free]

For the Fritters:

  • 1/2 of 1 large cauliflower
  • A handful fresh coriander
  • 2 garlic cloves, crushed
  • 1 cup chickpea flour
  • 2 teaspoons baking powder
  • 1 cup water
  • 1 teaspoon Himalayan pink salt
  • 1 tablespoon coconut oil

For the Spice Blend:

  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 teaspoon ground ginger (optional)
  • A pinch of chili flakes or cayenne pepper (optional)

To Serve:

  • Extra coriander and parsley (optional)
  • Avocado (optional)
  • Tamarillo relish (optional)

How to Prepare Spiced Cauliflower Fritters [Vegan, Gluten-Free]

  1. In a food processor, blend the cauliflower, fresh coriander, and garlic until they're finely chopped but not puréed to a mush.
  2. Add the chickpea flour, baking powder, salt, spices, and water. Blend on low to combine making sure there are no lumps of flour left.
  3. Heat the coconut oil in a pan on medium heat, then fry 1/4 cup scoops of the mixture, 3 minutes on each side, until bubbles appear and they start to look dry on top, then flip and cook the other side until golden.
  4. Place in a 120°F oven to keep them warm while you're cooking the remaining batch.
  5. Serve topped with sliced avocado, relish, toasted sesame seeds, and a squeeze of lemon.
