How to Prepare Simple Veggie Soba Noodles [Vegan]
- Bring a small pot of water to a boil and c your soba noodles for around 10 minutes before straining and rinsing under cold water.
- In a separate pan, heat oil and sauté bell pepper, mushrooms, and white part of onion until softened; about 5 minutes.
- Add in garlic and cook until fragrant then add in kale and stir until softened.
- Stir in noodles and soy sauce until heated through.
- Remove from heat and add remaining ingredients and serve.
