Roasted Vegetables with Quinoa and Maple Tahini Sauce [Vegan, Gluten-Free]

  • 1/2 cup cooked quinoa
  • 1 teaspoon cooking oil (olive oil works well)
  • 1 cup vegetables for roasting
  • 1 tablespoon tahini
  • 1/2 teaspoon maple syrup
  • 1 1/2 teaspoons lemon juice
  • 1 teaspoon cold-pressed olive oil
  • sea salt and black pepper


  1. Preheat oven to 360°F
  2. Roast a tray of mixed vegetables with 1 teaspoon oil, sea salt and pepper for roughly 30 minutes
  3. Whilst the vegetables are roasting, make the quinoa according to instructions
  4. Make the maple tahini sauce by mixing together the tahini, maple syrup and lemon juice add water if the mixture is too thick
  5. When everything is ready, mix the roasted vegetables with the quinoa, serve on a plate and drizzle the sauce over the top
