  • 2 cups raw cashews
  • 1/2 cup dessicated unsweetened coconut
  • 1 cup dried cranberries
  • 3 tablespoons water
  • pinch salt

How to Prepare Raw Cranberry Coconut Energy Bars [Vegan, Gluten-Free]

  1. Pulse cashews in a food processor until finely ground.
  2. Add other ingredients and pulse till a dough forms. Add more water if the mixture isn't coming together.
  3. Press into the bottom of a parchment paper-lined 8x8 pan and freeze for an hour or refrigerate overnight to set.
