Raw Cranberry Coconut Energy Bars [Vegan, Gluten-Free]
- 2 cups raw cashews
- 1/2 cup dessicated unsweetened coconut
- 1 cup dried cranberries
- 3 tablespoons water
- pinch salt
- Pulse cashews in a food processor until finely ground.
- Add other ingredients and pulse till a dough forms. Add more water if the mixture isn't coming together.
- Press into the bottom of a parchment paper-lined 8x8 pan and freeze for an hour or refrigerate overnight to set.
