Nothing beats sticky buns hot out of the oven, except for this maybe this raw version! It starts with a dense cashew-date-cardamom crust, then a sticky date-cinnamon layer, and finally a topping of sweet coconut cream frosting. Ooey-gooey, sweet, and tender, just like a warm cinnabun!

Ingredients You Need for Raw Cinnamon Bun Squares [Vegan]

For the Cardamom Crust:

  • 1 cup cashews
  • 7 dates
  • 1/4 teaspoon vanilla powder
  • 1 teaspoon coconut oil
  • 1/2 teaspoon cardamom
  • A pinch of salt

For the Cinnamon Bun Filling:

  • 1 cup dates
  • 1 tablespoon cinnamon
  • 2 tablespoons coconut oil
  • A pinch of salt
  • 1/4 teaspoon vanilla extract

For the Creamed Coconut Frosting:

  • 1/4 cup creamed coconut (coconut butter)
  • 1 teaspoon agave (optional)

How to Prepare Raw Cinnamon Bun Squares [Vegan]

  1. Process all ingredients for the crust in a food processor. Add the dates while processing.
  2. Line an 4 by 6-inch baking dish with parchment paper. Transfer the mixture to the parchment-lined baking sheet and spread evenly.
  3. Blend the ingredients for the cinnamon bun filling in a high-speed blender or food processor until very smooth.
  4. Transfer mixture on top of the crust and spread evenly. Let it set in the freezer for 15-20 minutes.
  5. Cut out 6-9 squares.
  6. Melt the creamed coconut in a dehydrator on 110°F then pour it on top of the squares. Let the frosting set in the freezer for a few minutes or serve immediately.
