These raspberry fig bars use a little maple syrup as their sweetener, along with the natural sweetness of the figs and coconut. They have my favorite flavor combination of sweet and tart. I could not stop snacking on them!

Ingredients You Need for Raspberry Fig Bars [Vegan, Gluten-Free]

  • 1 cup rolled oats
  • 1 cup pecans
  • 1/2 cup almond flour or ground almonds
  • 1/2 cup shredded coconut
  • 1/2 cup maple syrup
  • About 15 dried mission figs
  • 12 ounces (about 2 cups) raspberries, frozen or fresh

How to Prepare Raspberry Fig Bars [Vegan, Gluten-Free]

  1. Preheat your oven to 350°F
  2. In an 8x8-inch pan, place a piece of parchment paper or grease with coconut oil or spray.
  3. In a food processor, blend nuts and oats until coarsely ground. Add figs and maple syrup and blend until everything just comes together.
  4. Pour into a bowl and stir in almond flour and coconut.
  5. Press 3/4 of the mix into the bottom of the pan.
  6. Bake for 12 minutes.
  7. Remove from oven and cover crust with raspberries.
  8. Cover raspberries with remaining mix. pressing down on top of raspberries.
  9. Bake for additional 25 minutes.
  10. Let cool before slicing.
