    Quinoa & Avocado Chili Con Carne [Vegan]

    Quinoa and butter bean chili con carne dish served on a bed of brown rice - perfect for anyone looking for a hearty and satisfying meal.

    Ingredients You Need for Quinoa & Avocado Chili Con Carne [Vegan]

    • 1 1/2 cups of brown rice
    • 1 can butter beans
    • 1 can chopped tomatoes
    • 1 cup of vegetable stock
    • 1 carrot (thinly sliced)
    • 1 red pepper
    • 1 red onion
    • 1 lime
    • Parsley
    • 1/4 cup soya single cream
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder (or use a clove of garlic)
    • 1 tablespoon nutritional yeast (optional)
    • Salt and pepper

    How to Prepare Quinoa & Avocado Chili Con Carne [Vegan]

    1. Start by running water through the quinoa. You can run this under the tap for a little while. Drain out the water and leave to sit.
    2. Using a pot or rice cooker, add the brown rice and double the volume of water. Cook for 20-minutes. We find sometimes cooking brown rice can take a little longer so just check back in 20-minutes to see how the rice is doing a little bit of water if required.
    3. Next prepare all of the ingredients by finely chopping them. You should also roughly chop the parsley.
    4. Start by frying onions in a little bit of oil. Then add the peppers and carrots.
    5. Prepare your vegetable stock. This includes boiling 300ml of water and stirring in the vegetable stock.
    6. Add the soya single cream.
    7. When the vegetables are lightly fried and in the chopped tomatoes and vegetable stock.
    8. Next, add the butter beans and then the quinoa.
    9. Add all the herbs, spices, and optional nutritional yeast.
    10. Put the lid onto your pan and leave on medium heat simmering for the next 20 minutes.
    11. Check occasionally to give the mixture a quick stir to ensure it doesn't stick to the bottom of your pan.
    12. When the mixture is nearly ready add a squeeze of lime juice and lime zest.
    13. Check to make sure the quinoa is cooked. If not, then add a little extra liquid and leave for another 5 minutes.
    14. Plate up your rice and then add helpings of the chili.
    15. Feel free to garnish the dish with half an avocado which we cut into 1cm slices and extra squeeze of lime juice.
