For the Crust:

  • 15 Medjool dates
  • 2 cups walnuts

For the Filling:

  • 15-ounce pumpkin purée
  • 1 1/2 cups walnuts
  • 4 ounces vegan cream cheese
  • 4 Medjool dates
  • 1/2 cup orange juice
  • Vegan white chocolate, for garnish

How to Prepare Pumpkin Walnut Cheesecake With White Chocolate [Vegan, Gluten-Free, Grain-Free]

  1. First, make the dough. Combine dates and walnuts in the bowl of a blender or food processor. Pulse until you have a sticky mixture. Prepare a 7-inch springform pan with parchment paper or grease with a little bit coconut oil, then press the date-walnut mix firmly onto the bottom.
  2. For the filling, combine pumpkin purée, walnuts, vegan cream cheese, orange juice, and dates and process again with the blender or food processor until smooth.
  3. Finally, put the filling on top of the dough. Garnish with white chocolate shavings. Chill until ready to serve.
