Ingredients

For Tofu Marinade:

  • 10 ounces extra firm tofu
  • 2 tablespoons coconut aminos (or soy sauce)
  • Juice of 1 lime
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon maple syrup or to taste
  • 1 teaspoon sesame seeds
  • 1 teaspoon olive oil

For the Sandwiches:

  • 2 small wholemeal baguettes cut into 4 rolls
  • 1 ripe avocado
  • Juice of 1 lime
  • Salt & pepper to taste
  • A pinch of chili flakes (optional)
  • 1/2 cup firmly packed grated carrots
  • 1/2 cup firmly packed finely shredded red cabbage
  • 1 teaspoon olive oil
  • Salt & pepper to taste
  • 1 cup rocket salad leaves
  • A handful of toasted peanuts & fresh coriander for garnish

For the Sandwich Dipping sauce:

  • 1 tablespoon coconut aminos (or soy sauce)
  • Juice of 1 lime
  • 1 tablespoon maple syrup or to taste
  • 1 teaspoon sesame seeds

Preparation

  1. Preheat the oven to 400°F.
  2. Drain the tofu well by wrapping it in a paper towel and placing it under a heavy weight so the paper towel can absorb extra water from the tofu. Cut into 5inch thick rectangles.
  3. To prepare the marinade, combine coconut aminos, lime juice, sweet chili sauce, maple syrup & sesame seeds in a bowl and whisk well.
  4. Add tofu into the bowl, ‘coat’ it with marinade, cover, and place in the fridge for 10mins.
  5. In the meantime, prepare the avocado ‘mayo’. Mash up the avocado with a fork, add the lime juice, salt & pepper and a pinch of chili flakes (if using), cover with cling film and set aside for later.
  6. Heat up 1 tablespoon olive oil in a pan. When the pan is very hot, gently place the tofu blocks into the pan & drizzle with the remaining marinade. Fry on each side for a couple of minutes until it turns crispy brown. Gently transfer the tofu to a roasting dish and roast for 10mins.
  7. To prepare the dipping sauce, whisk all the ingredients in a small bowl. Set aside.
