In honor of his running our lives for the last two years, I decided to make a cake for our fantastic dog. A dog-friendly, nutrient-rich cake, of course, using ingredients that would be helpful for his coat, his eyes and his little dog joints.

Ingredients You Need for Peanut Butter Carrot Cake (For Pups) [Vegan, Gluten-Free]

  • 3 cups juicer pulp (ie. carrot, kale, celery)
  • 2 tbsp flax + 1/2 cup water, gelled
  • 1 cup peanut butter, warmed and divided
  • 1 1/2 tbsp coconut oil, liquid

How to Prepare Peanut Butter Carrot Cake (For Pups) [Vegan, Gluten-Free]

  1. Preheat the oven to 350F.
  2. Combine flax with water and let it gel for 10 minutes in a mixing bowl.
  3. Add juicer pulp to flax mixture and stir to combine thoroughly.
  4. Press into a loaf pan or cake tray and transfer to the oven. Bake for ~45 minutes until a toothpick inserted in the center comes out clean.
  5. Once cake is cooked, remove from the oven and allow to cool for 15 minutes before turning out onto a work surface.
  6. Slice your cake into four equal pieces (I used a square pan and cut it into four smaller squares; use whatever shape you like).
  7. Layer: cake - spread some peanut butter - cake - peanut butter, etc until all cake layers are stacked and held together with PB.
  8. Combine remaining peanut butter with coconut oil and spread this - like fondant - around the outside and top of your cake.
  9. Decorate as desired and transfer to the fridge to set.

Notes

Serve to your pup in small slices so as to not overwhelm their tummy. This will keep in the fridge for up to a week.
