Paleo Lemon Coconut Energy Bites [Vegan]
- 1 cup almonds, roasted
- 1 cup dates
- 1/3 cup shredded coconut, unsweetened
- 1/2 lemon, juiced and zested
- pinch sea salt
- unsweetened coconut, for rolling [optional]
- In a food processor, add almonds and dates and process until nuts are broken down and mixture is sticky.
- Add coconut, lemon juice and zest and sea salt and pulse until combined.
- Form balls 1-2 tablespoon in size and roll in additional shredded coconut, if desired. Chill in the fridge until ready to eat.
