Ingredients

  • 1 cup almonds, roasted
  • 1 cup dates
  • 1/3 cup shredded coconut, unsweetened
  • 1/2 lemon, juiced and zested
  • pinch sea salt
  • unsweetened coconut, for rolling [optional]

Preparation

  1. In a food processor, add almonds and dates and process until nuts are broken down and mixture is sticky.
  2. Add coconut, lemon juice and zest and sea salt and pulse until combined.
  3. Form balls 1-2 tablespoon in size and roll in additional shredded coconut, if desired. Chill in the fridge until ready to eat.
