No-Bake Cinnamon Chocolate Peanut Butter Crispie Bars [Vegan, Gluten-Free]

This recipe is super simple! Only seven ingredients in here and literally everything gets poured into a pan, cooked, mixed and then poured into a serving pan and topped with melted chocolate – that’s it! Make them immediately and bring them everywhere. They're a perfect portable snacking treat!

Ingredients You Need for No-Bake Cinnamon Chocolate Peanut Butter Krispie Bars [Vegan, Gluten-Free]

  • 1/2 cup brown rice syrup
  • 1/2 cup vegan cane sugar
  • 1/2 cup natural peanut butter
  • 2 teaspoons cinnamon
  • 1 1/2 cups gluten-free brown rice crisp cereal
  • 1 cup gluten-free chocolate rice crisp cereal
  • 1/2 - 2/3 cup vegan chocolate chips
  • Extra cinnamon for topping!

How to Prepare No-Bake Cinnamon Chocolate Peanut Butter Krispie Bars [Vegan, Gluten-Free]

  1. In a pan add your brown rice syrup, sugar and peanut butter and turn on medium heat.
  2. Continually stir mixture until it is well combined and slightly starts to simmer just a tiny bit.
  3. Turn heat off and mix in your rice crisp cereal and cinnamon.
  4. Spray a pan with non-stick spray and then transfer the mixture into the pan and use the back of a spoon or your hands to firmly press the mixture down/together. You can spray your spoon or hands with non-stick spray to make it less sticky.
  5. Melt you chocolate chips in the microwave and pour over the top, spread evenly, top with more cinnamon and let sit until firm (can put in freezer for 15 minutes to speed up the process of the chocolate setting).
  6. Enjoy!

Notes

For the chocolate topping it says 1/2 to 2/3 cups of chocolate ... the amount you use depends on how thick you want your chocolate on top to be. I only used 1/2 cup!
