Ingredients You Need for Mung Bean Stew [Vegan]

  • 1 tablespoon vegetable oil
  • 1/2 white onion, quartered and thinly sliced
  • 1/2 carrot, quartered and thinly sliced
  • 1 clove garlic, minced
  • 1 cup dried mung beans
  • 2 cups water
  • 1/4 cup crushed tomato
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

How to Prepare Mung Bean Stew [Vegan]

  1. Soak overnight in room temperature water in the proportion of 1:2 mung beans.
  2. Heat oil in saucepan over medium-high heat. Add onions and cook 3-4 minutes.
  3. Add carrots and cook until onions are translucent. Add garlic and cook for 1 minute more.
  4. Add mung beans, stir to combine.
  5. Add water and bring to a boil.
  6. Cover and let simmer for 40 minutes.
  7. Add tomato, garlic powder, paprika, cumin, salt and pepper. Store to combine and cover again.
  8. Cook for 10 more minutes or until beans are tender and liquid is absorbed. Check the seasoning before serving
  9. Munch on as many as you like!
