Ingredients You Need for Mung Bean Stew [Vegan]
- 1 tablespoon vegetable oil
- 1/2 white onion, quartered and thinly sliced
- 1/2 carrot, quartered and thinly sliced
- 1 clove garlic, minced
- 1 cup dried mung beans
- 2 cups water
- 1/4 cup crushed tomato
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1 teaspoon salt
- 1/4 teaspoon black pepper
How to Prepare Mung Bean Stew [Vegan]
- Soak overnight in room temperature water in the proportion of 1:2 mung beans.
- Heat oil in saucepan over medium-high heat. Add onions and cook 3-4 minutes.
- Add carrots and cook until onions are translucent. Add garlic and cook for 1 minute more.
- Add mung beans, stir to combine.
- Add water and bring to a boil.
- Cover and let simmer for 40 minutes.
- Add tomato, garlic powder, paprika, cumin, salt and pepper. Store to combine and cover again.
- Cook for 10 more minutes or until beans are tender and liquid is absorbed. Check the seasoning before serving
- Munch on as many as you like!
