Ingredients
For the Cauliflower:
- 1 medium cauliflower
- 2 tablespoons olive oil
- 1 teaspoon dry thyme
- Salt and black pepper
For the Sauce:
- 3/4 cup raw cashews
- 3/4 cup almond milk
- 1/4 cup white miso
- 1 teaspoon garlic powder
Preparation
- Set the oven to 400°F. Cut the cauliflower into florets, place in a baking pan, and coat with the olive oil, thyme, salt, and black pepper. Cook for 15-20 minutes.
- In the meantime, blend all the sauce ingredients in a blender. Transfer the roasted cauliflowers into a saucepan, pour the sauce over and cook for 5-7 minutes over medium heat. Serve warm or at room temperature.
