Lemon Raspberry Key Lime Pie [Vegan, Gluten-Free]






For the Dough:

  • 1 1/2 cups cashews
  • 1 1/4 cups Medjool dates, chopped
  • 1 lime, juiced
  • 1/2 lemon, juiced, plus 1 teaspoon zest

For the Filling:

  • 1 heaping cup Medjool dates, chopped
  • 2 cups cashews
  • 1 1/2 lemons, juiced, plus 2 teaspoons zest
  • 1 lime, juiced
  • 2 ripe avocados
  • 1 1/4 cups water
  • Raspberries, for garnish


  1. In a high-speed blender or food processor, add all the dough ingredients and pulse a few times until combined. Press the dough into a7-inchh springform pan prepared with parchment paper or greased with a bit of coconut oil.
  2. We need a blender again. Combine all the filling ingredients except the raspberries, process until really creamy and smooth. Finally, pour the filling over the dough and garnish with raspberries.
