Lemon Bars [Vegan]

A sweet and lemony plant-based treat with a simple oat crust. Flavorful filling made with lemon and tofu and sweetened with dates. Sets up perfectly!

Ingredients You Need for Lemon Bars [Vegan]

Crust

  • 15 Deglet Noor dates pitted
  • 3/4 cup warm water
  • 2 cups rolled oats
  • pinch salt
  • 3 tablespoons shredded coconut unsweetened
  • 1 teaspoon vanilla extract

Filling

  • 8-oz tofu firm
  • 1 lemon
  • 10 Deglet Noor dates pitted
  • 1 teaspoon vanilla extract
  • 2 tablespoons arrowroot powder
  • 1/8 teaspoon turmeric for color
  • 1 tablespoon shredded coconut for topping optional

How to Prepare Lemon Bars [Vegan]

Crust

  1. Preheat oven to 375ºF.
  2. Soak dates for crust in warm water for at least 5 minutes.
  3. Add oats, coconut and salt to food processor, process for 20 seconds or until coarsely ground. Transfer to a medium mixing bowl.
  4. Add dates, soaking water and vanilla to food processor. Process until smooth, stopping to scrape down sides as needed. Add to oats mixture and stir until combined.
  5. Press crust into the bottom of an 8x8 or 9x9 inch parchment lined baking sheet.

Filling

  1. Cut hard tips off of lemon. Slices into 4 wedges and remove seeds. Place slices in food processor (peel included).
  2. Add remaining filling ingredients to food processor and process for 1-2 minutes, or until smooth, stopping to scrape down sides as needed.
  3. Pour filling over crust, using a spatula to spread evenly. Transfer to oven and bake for 20-25 minutes, or until edges begin to turn golden brown. Remove from oven and sprinkle with coconut, if desired.
  4. Let cool for 10 minutes. Transfer to refrigerator to cool for at least 1 hour prior to slicing and serving.
